Businesses serving up grub to hungry mouths in Lancashire are inspected regularly by food safety officers where they’ll be given an overall rating on their standards. They are judged on hygienic food handling, cleanliness and condition of facilities and building and management of food safety.
Food handling includes preparation, cooking, re-heating, cooling and storage. Cleanliness and condition of the facilities and building look at having an appropriate layout, ventilation, hand washing facilities and pest control to ensure good food hygiene is in place.

When it comes to the management of food safety, inspectors look at the systems and checks in place that ensures food is safe to eat. It will also look to evidence that staff know about food safety and the food safety officer has confidence that standards will be maintained in the future.

“We were planning on moving because we wanted to give the healthy food aspect a bit of a push. On the day our three-door fridge, which is not in use at the moment, had gone really bad. It was hot outside and the temperature [of the fridge] had gone down to 15 degrees.
“Its the simple things that went wrong, but in regards to the property itself, we’re planning on moving out of that property but had been held back.”

All staff have since undergone either new refresher training. After appealing the decision, we have now requested a meeting for advice to ensure our new procedures and updated documentation are now to the highest standard possible and a reinspection at the earliest convinience.
The cardboard from the sink area on the floor has been removed and was only placed there because water had got onto the floor and was slippy. We have also contacted the flooring manufacturer to seek advice on required method of cleaning to reduce slippiness and improve grip. This has now been implemented.”
